Guichon initially began as a savory chef before discovering his true passion for pastries, specifically chocolate.
After winning a French reality cooking competition, the chef opened a culinary school and began teaching aspiring pastry chefs before hosting the Netflix series, School Of Chocolate.
In an interview with Eater, the pastry chef detailed the journey to his fame, which he started at the start of COVID, claiming it was ‘slow’ at first.
‘It started right about when COVID started to heat up in 2020, and TikTok was really just emerging,’ he said.
‘It was very slow at first, but when my Netflix show came out, people started to look my name up on the platform. That created a lot of interest, and the algorithm started pushing people my way.’
Guichon gave a shoutout to one of his favorite creations, the Connect Four game, calling it a ‘challenge.’
‘Obviously interactive chocolate is very hard to conceive, and chocolate is so fragile as a medium itself, and so it can be very hard to get things moving. But I’m always up for a challenge,’ he told Eater.
The chef uses a variety of tools that you may never guess, ‘from the wood lathe to the pottery wheel to the simple drill.’
He added that he ‘borrows’ equipment and ideas ‘from the world.’
And for those who were wondering what happens after they finish the 30-second videos that document his incredible work, well don’t worry, the chef said he doesn’t tear the statues down.
‘We keep most of them on display here for the students to use for educational purposes. Some of them are sold, but we keep most of them at the school,’ he told Eater.
