Chef’s ‘game-changing’ ingredient makes roast potatoes taste crispier than ever

A home chef has claimed one unusual ingredient when making roast potatoes will leave them tasting better than ever before.

Matt Duncan has attracted a whopping 297,000 followers to his TikTok account @lockdowncuisine_, thanks to his simple recipes that have helped thousands in the kitchen during the various coronavirus lockdowns this year.

One of his most popular videos to date is his novel way at making some delicious roast potatoes.

The “game-changing” ingredient, he claims, is parmesan.

First, Matt peels and cuts his potatoes before boiling them in some salted water.

While they boil, he creates the all-important seasoning – 1tsp garlic granules, 1tsp smoked paprika, 1tsp rosemary, 1tbs plain flour, 100g parmesan and salt and pepper. He pours them all into a bowl and mixes them together.

The next step is to pre-heat some oil in a baking tray. Matt then pops his boiled potatoes into his ready-made seasoning, making sure they are fully coated.

Finally, he puts them in the heated baking tray and whacks them in the oven at 200C for 40-50 minutes.

The mouthwatering video has been seen more than 270,000 times where viewers flooded the comments saying they were desperate to try it.

Matt has since spoken exclusively to Daily Star where he explained why parmesan is such a vital ingredient.

“I love roast potatoes in whatever form they come, but I wanted to recreate what you would normally have for Sunday dinner into something really special,” he said.

“A lot of cooks do coat their roasties in plain flour just before they go in the oven but in my opinion this also gives you an opportunity to add amazing flavour to your potatoes with different seasonings.

“This got me thinking, ‘What is another one of my favourite ingredients?’ Then I thought: ‘You can’t really go wrong with cheese!’

“Using Parmesan is a game changer because it creates a delicious crispy cheesy outer shell around your potatoes while retaining retaining their soft and fluffy deliciousness inside. Just how they should be”

The foodie says the unique roasties go well with all the meals ordinary potatoes go with. They also taste “amazing” on their own, especially when dipping them into garlic aioli.

He added: “To be honest I can’t believe my recipe has been viewed over 270,000 times for something as simple as a potato, but obviously there must be a lot of potato lovers just like me.”
